Gold feathers are collectibles that can be obtained by playing with Guest Birds. When playing with such a bird, the level score bar will display a tiny feather next to the three stars. If the score reaches that feather and you pass the level, you will be awarded a golden feather.

Before entering the level, you can choose a bird to play with on the pre-level screen.
